From a habit of the old Genoese bakers we have rediscovered the Crispy Focaccia a product which, in the Ligurian tradition, avoided the waste of fresh focaccia left over from the day before and which was used as a crouton in minestrone . Today the revised format and a careful biscuiting make this product tasty and delicious, as an aperitif or side dish or, to stay in the tradition, dipped in minestrone with Pesto !
